We purchased this unit and find it works well, albeit that it's expensive compared to other solutions, although I suppose what's expensive to one person could be cheap to another, especially if it fulfils a need.

As it creates a connection independent of any Wi-Fi solution, it doesn't require staff or guests to connect to internal or Guest Wi-Fi to use it.
Furthermore, you can get a variety of converters, so you can convert the HDMI port to USB-C, USB-A, etc.
In theory, you should be able to plug one end into an HDMI port on a screen and the other into the transmitting device and project your screen, then move the screen end onto another screen and project to there instead.
The Microsoft Wireless Display adapter works well for Windows Laptops but not Mac.
We recently purchased an LG 65" UP8000 4K UHD Smart TV 65UP8000PTB for one of our meeting rooms - it has wireless display for Windows and Mac built in,
Unfortunately, the OP will be dealing with a range of TV screens, if I've read it correctly, rather than interactive monitors, hence why I've suggested a system that's not reliant on any specific screen, interactive capability or in-built environment of the screen.
